Strawberry Chamomile Mocktail

Fruity and refreshing, this strawberry chamomile mocktail is spring in a glass! We love getting creative with RushTush products and thought that a light ice tea drink would be the perfect way to enjoy our new range of teas on warmer days. With extracts of chamomile, lavender, and vanilla, this tea pairs perfectly with the zestiness of grapefruit juice and the sweetness of honey.

INGREDIENTS:

CHAMOMILE HONEY SYRUP

  • 3/4 cup water
  • 1/3 cup honey
  • 1-2 RushTush Calming Tea tea bags (purchase yours here)

FOR THE DRINKS

  • 1/3 cup  fresh grapefruit juice (about half of 1 grapefruit)
  • 2-4 tablespoons chamomile honey syrup
  • 4 fresh strawberries sliced
  • sparkling water
  • crushed ice

METHOD:

CHAMOMILE HONEY SYRUP

In a small saucepan, combine the water and honey. Bring to a low boil and then allow to simmer for 1 minute. Remove from heat and add one or two RushTush Calming Tea tea bags (depending on how strong you want it). Steep for 5 to 10 minutes. Remove the teabag/s and allow syrup to cool.

FOR THE DRINKS

Add grapefruit juice, chamomile syrup, and strawberries to a glass. Use a muddler or spoon to slightly mash the strawberries.  Add a handful of ice and top off with sparkling water. Give the drink a gentle stir. Garnish with fresh chamomile flowers and more strawberries.

Pancakes from Veggie Glow

Pancakes always feel like a weekend treat, but this recipe from my Veggie Glow Guide is so simple to whip up you could quite easily enjoy them for a weekday breakfast too. They’re light and fluffy but also pack a protein punch thanks to the serving of protein powder added to the mixture. Serve with a handful of mixed berries for an antioxidant boost, great for protecting your cells against free radicals! They’re also a good source of fiber and vitamin C too.

SERVES 1, MAKES 3 PANCAKES

INGREDIENTS:

2 whole large eggs
1/2 tsp. baking powder
30g of protein powder (pea protein base)
1/2 banana mashed
1 tbsp. rolled oats
4 tbsp. unsweetened almond milk
1/2 tsp. ground cinnamon
A handful of fresh berries (raspberries and blueberries)

METHOD:

1. In a mixing bowl, whisk 2 whole large eggs.
2. In another bowl combine and stir all the ingredients plus cinnamon powder with the whisked eggs and baking powder
3. Add olive oil in a large non-stick frying pan over medium heat. Ladle in one-third of the mixture and cook each side for 2-3minutes, or until lightly golden. Repeat with the rest of the mixture
4. Serve with a handful of fresh berries such as raspberries and blueberries.

Cleoptra Smoothie from Vegan Glow

Egyptian Queen Cleopatra was absolutely obsessed with almonds and included them in both her diet and beauty routine so it only seems fitting that this smoothie be named after her. The base of this dreamy creamy drink is almond milk, which is high in Vitamin E and low in sugar. The oat bran provides fibre and the chia seeds contain omega fatty acids, essential for brain health. The recipe calls for a cup of mixed berries but feel free to play around with different combinations of strawberries, raspberries, blueberries etc until you get the flavour balance just how you like it.

INGREDIENTS:

1 cup of unsweetened Almond Milk
1 OR 2 Tablespoons of Pea Protein Powder
2 Tablespoons of Oat Bran.
3/4 Cup of Mixed Berries
1 Tablespoon of Chia Seeds (soaked the night before)

METHOD:

Blend ingredients in a juicer OR a high watt blender to retain all the fibre for a slower release of nutrients

Creamy cashew, zucchini, and basil soup

Simple one-pot-meals that use fresh ingredients and pack a flavour punch are ideal for busy weeknights when we don’t want to spend hours standing over the stove. This cashew, zucchini, and basil soup from my Vegan Glow Guide is packed with vitamins and minerals and will keep you satisfied for hours. I love that the cashews make it super creamy and give it a decadent taste!

INGREDIENTS:

2 tsp olive oil
1 medium onion
2 garlic cloves
3 – 4 large zucchini
1 1/2 cups vegetable stock
45g raw cashew nuts
1/2 cup fresh basil leaves
Salt and pepper to taste

METHOD:

1. Place olive oil, diced onion, and garlic in a deep based pan. Gently brown until succulent and glossy. Add diced zucchini and leave to soften for 10 – 15 minutes, stirring occasionally.
2. Add stock thereafter, cover and leave to simmer for 10 minutes
3. Add cashews and fresh basil leaves and blend with a handheld soup blender or transfer to a fixed blender. Blend until smooth.
4. Return to the heat, season to taste, and allow to gently simmer for another 5 minutes. Serve with fresh basil for garnish.

Whey Protein Waffles

Waffles are such a treat, but they’re also a great way of getting some extra protein into your diet – simply add a scoop of your RushTush Whey Protein powder to the batter!  I love them for breakfast but you can pretty much eat them any time of day (or night!).

Registered dietician @raeesa_eats shared her protein waffle recipe with us. It’s easy to make and includes a serving of RushTush Original Whey to give you that muscle-building boost.

INGREDIENTS:

1 cup flour
1 serving RushTush Original Whey Protein Powder
1/2tbl baking powder
Pinch of salt
Dash of cinnamon
1 cup milk
1 egg
1/4 tsp vanilla

METHOD:
Blend everything together and pour the batter into a heated waffle pan until golden. Top with healthy toppings of your choice. We love ours with berries, almonds, and honey.

Recipe makes 4 waffles.

Bump Balls

These chocolatey balls of goodness from my Bump Glow Guide are the perfect balance of delicious and nutritious – the ideal combo to keep you going when those pregnancy cravings kick in! Add two scoops of protein powder to the mix to up your daily protein intake, which is always beneficial during pregnancy.

INGREDIENTS:

1 cup of oats
1/2 cup of honey
1/2 cup of natural peanut butter
1/2 cup of cocoa
2 scoop vanilla protein powder (optional)

METHOD:

1. Mix all ingredients
2. Form into balls and freeze for 1 hour
3. Store in an airtight container

Spicy Sweet Potato Soup

One of my famous most loved nutritious soups in my Winter Cleanse is the Spicy Sweet Potato Soup. The meals in my eating plans are not only about weightloss. The menu focus will always be about the medical and health benefits. Sweet potatoes offer the best sources of vitamin A, vitamin B, riboflavin, niacin, thiamin and caratenoids. Scientists had determined that sweet potato contains anti inflammatory, anti diabetic and anti cancerous properties. With added cumin, this winning soup is sure to improve your digestive health and assist with bloating.

INGREDIENTS:
2 tsp of olive oil
1 large red onion, finely diced (about 1 and 1/2 cups)
2 garlic cloves, minced
5 sprigs of coriander, leaves reserved for garnish & stems tied together
3/4 tsp cumin
Sea salt
2 large sweet potatoes, peeled and diced (about 6 cups)
6 cups vegetable stock

METHOD:
Heat the olive oil in a large pot over medium heat. Add the onion, garlic, coriander sprigs, cumin and a heavy pinch of salt and cook, stirring now and then, until softened but not browned (about 10 mins). Add the sweet potatoes and stir. Then add the vegetable stock and bring to a boil, lower the heat and simmer until the sweet potatoes are very soft (about 30 mins). Remove the coriander sprigs. Carefully puree the soup in a blender until you’ve reached your desired texture. Garnish with a few coriander leaves and enjoy.

Can we catch a break? Enjoy this warm drink with almond milk or try everyone’s new fave, oat milk. Ditch the honey for vegan honey and she becomes a vegan babe! INGREDIENTS:
1 cup almond milk
1 Tbsp raw cacao powder
1 Tbsp pure maple syrup/honey 
1/4 tsp vanilla essence
Pinch of sea salt

METHOD:
Combine all the ingredients into a saucepan over high heat, using a whisk to break up any clumps.
